For the Meatloaves:
- 1 lb ground chicken
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs (plain or Italian-style)
- 2 cloves garlic, minced
- 1 large egg
- ¼ cup milk (whole or 2%)
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- Salt and pepper, to taste
For the Topping:
- ¼ cup marinara sauce (store-bought or homemade)
- ¼ cup shredded mozzarella cheese
Step-by-Step Instructions
Step 1: Preheat Your Oven
Start by preheating your oven to 375°F (190°C). Prepare a baking pan by lightly greasing it with oil or lining it with parchment paper for easy cleanup.
Step 2: Mix the Meatloaf Base
In a large mixing bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, minced garlic, onion powder, salt, and pepper. Mix thoroughly but avoid overmixing to keep the meatloaves tender.
Step 3: Shape the Meatloaves
Divide the mixture into four equal portions and shape each into a small, oval meatloaf. Place them evenly spaced on your prepared baking sheet.
Step 4: Bake the Meatloaves
Bake in the preheated oven for 25–30 minutes, or until the internal temperature reaches 165°F (75°C).
Step 5: Add the Toppings
Remove the meatloaves from the oven and spoon a tablespoon of marinara sauce over each loaf. Sprinkle shredded mozzarella on top and return to the oven for another 5 minutes until the cheese is melted and bubbly.
