Step 3: Combine the Ingredients
In a large mixing bowl, combine the chopped nuts, pine nuts, and pumpkin seeds. Add the date paste to the bowl and mix thoroughly using a sturdy spatula or your hands. Make sure every nut and seed is well-coated with the sticky date paste, as this is crucial for the bars to hold together.
Step 4: Press and Chill
Line a small rectangular baking dish or loaf pan with parchment paper, leaving some overhang for easy removal. Transfer the mixture into the pan and use a spatula or the bottom of a heavy glass to press it down firmly and evenly. The more you compress it, the better the bars will hold their shape. Chill the pan in the refrigerator for at least 1 hour (or 30 minutes in the freezer) to allow the mixture to set.
Step 5: Slice and Serve
Once chilled, use the parchment paper to lift the block out of the pan. Place it on a cutting board and slice it into bars or bite-sized squares.
